Yummy Pumpkin Pie Recipe 

 


PREP TIME : 15 min.

INACTIVE PREP TIME : 30 min.

COOK TIME : 50 min

LEVEL : Easy

SERVES : 6 to 8

 

INGREDIENTS :


  • 1 (8-ounce) package cream cheese, softened
  • 2 cups canned pumpkin, mashed
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 egg plus 2 egg yolks, slightly beaten
  • 1 cup half-and-half
  • 1/4 cup (1/2 stick) melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger, optional
  • 1 piece pre-made pie dough
  • Whipped cream, for topping



DIRECTIONS :


Preheat the oven to 350 degrees F.

Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. 
Pinch and crimp the edges together to make a pretty pattern.
 Put the pie shell back into the freezer for 1 hour to firm up.
 Fit a piece of aluminum foil to cover the inside of the shell completely.
 Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven.
 Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.
For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. 
Add the pumpkin and beat until combined. 
Add the sugar and salt, and beat until combined.
 Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined.
 Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.
Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set.
 Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.

Sunny Summer Getaways

Now that the summer is drawing to a close, we are taking our last sunny getaways for the year. 

Here are a few tips by Jennifer Ford Berry from the book 'Organize Now'

 

 

The purpose of taking a vacation is to have fun, relax, and refresh. Trying to do too much when you return can undermine what you've gained by getting away. Take time to plan before you leave, and slow down when you return, so that the benefits of your vacation last much longer.

 

  • When you schedule vacation time from work, be sure to save one vacation day to recover at home.

  • Write your name on the inside, and outside of your luggage.

  • Attach something personal, such as a ribbon or sticker, to each piece of  luggage to make it more recognizable at the luggage carousel.

  • Plan out the outfits you will wear, try to stick to three or four colors of clothing that match each other.

  • Remove perishables from the refrigerator, empty all your wastebaskets, and take out the garbage.

  • Clean your house before you leave so you can come back to a beautiful, welcoming, clutter free home!

  • Lock all windows and doors, and activate alarms.

  • When you return, make the most of your vacation day at home.  Do the laundry and process the mail.

Summer Maintenance


Taking care of your home is very important! There are things you can do every season to make sure that your home stays just as nice as the day you moved in.  Here is a list of things you can do this summer:

-Check and operate air conditioning system.
-Adjust registers and confirm that cold air returns are clear of furniture and draperies.
-Make certain the air conditioner compressor is level and clear of debris.
-Start and adjust sprinkler system.  Test exterior faucets for broken pipes.
-Check overhead garage door – tighten bolts as needed and lubricate springs with motor oil. Have other repairs performed by professionals.
-Clean gutters and confirm that downspouts or splash blocks drain away from house.
-Look for settling of backfill soils and fill in where needed.
-Check exterior caulking and touch up.
-Check foundation, concrete slabs, and yard for settling of backfill soils for concrete support and add additional dirt around home as needed to maintain positive drainage.
-Check exterior paint and stained surfaces (especially stained doors) and refinish as needed.
-Inspect grout around tile (floors and walls) and touch up.
-Wash windows and screens, clean weep holes in window tracks for proper drainage and lubricate tracks.
-Inspect for shrinkage damage such as minor drywall cracks and separations of wood trim.  Repair by caulking as needed. 
-Regularly check sprinkler head adjustments.
-Check interior caulking for touch ups as needed.
-Pour a quart of water down basement floor drain. As water in drain evaporates, sewer odor may seep into house.
